Ingredients:
300 gram jambal roti or other salted fish, cleaned
vegetable oil
100 gram red chilies, finely sliced diagonally
2 bay leaves
2 cm fresh galanggal(lengkuas)
375 ml thin coconut milk from ½ coconut
1 tomato, sliced
a pinch of sugar
Spice-Paste
8 shallots
2 cloves garlic
½ cm fresh kencur
Instructions:
Roast the ikan jambal until the fishy smell is gone. Rinse in water and slice in 4 x 4 cm squares.
Fry the chilies and spice-paste until fragrant. Add the salam leaves and the lengkuas. Continue frying for a minute or more. Add the santan and fish. Bring a boil and continue simering until santan thickens. Add the potato slices and the sugar. Continue cooking until tomato slices have gone limp. Remove and serve.
Make for 4-6 servings with other dishes.
