Wash the fish inside and out and dry thoroughly with kitchen towel paper.<br />Carefully pound the fish with the flat of a large knife. Massage it hard all over in order to release the meat from the skin.<br />Remove the backbone of the fish but leave tail and head in place: bend the tail towards the head until you feel the bone snap. Carefully pull out the bone through the gill-opening. Take care not to break the skin anywhere.<br />Press out all the meat through the gill-opening by pressing the fish with a spoon from the tail-end towards the head.<br />Turn over the skin by pushing the tail towards the head. Remove the bones then push the tail back through the head opening. Flake the meat and fry in a dry pan for a few minutes, then remove all the tiny bones from the meat. Mix the meat with the grated coconut, coconut milk, beaten eggs and the pounded Spice-paste. Blend till smooth. The consistency should be like soft butter.<br />Put the stuffing back inside the fish through the gill-opening. Sew up the opening after stuffing the fish. Wrap in a banana leaf and secure the ends. Steam until done, approximately 15-20 minutes. Cut off the fins and tail and remove gills.<br />In a food processor or using a mortar and a pestle, chop the nuts, then blend in the ginger, salt, shallots, scallions, tomato, chilies, and basil leaves (if used) to form a coarse paste. Mix in the oil.<br />Stuff the fish with 1/3 of the paste and the roe (if used). Spread half of the remaining paste on the banana leaf square, lay fish over the paste, and cover it with the remaining paste. Wrap the fish and use wooden skewers to close both ends of the banana leaf square.<br />Steam over hot water in a Chinese-style steamer for 30 minutes. Rinse in water and slice in 4 x 4 cm squares.<br />Fry the chilies and spice-paste until fragrant. Add the salam leaves and the lengkuas. Continue frying for a minute or more. Add the santan and fish. Bring a boil and continue simering until santan thickens. Add the potato slices and the sugar. Continue cooking until tomato slices have gone limp. (especially it's ink-sack). Grind garlic and shallots until fine. Then mix them with tomato sauce, mushroom ketchup, lime juice, refresh spices, salt and pepper to taste.<br />Soak the cleaned squid in the spices above about 45 minutes so that it can penetrate then fry the squids until half cooked. Strain and set aside.<br />Heat the oil in a wok. Add the grounded spice paste and the lemongrass. Stir-fry on high heat until it smells fragrant. Lower the heat and add the prawns and a little of the tamarind water. Stir-fry for a minute.<br />Raise the heat and add the rest of the tamarind water, the sugar and the salt. Bring to a boil and cook for about 10 minutes. Pour in some salt as you like and boil until the pieces of oxtail become very tender. This could take up to 3-4 hours of boiling time. Pour in some more water when needed until they become tender. <br />Once they are tender, make sure that you have enough broth (± 6-8 cups). If not enough, pour in some more water. <br />Bring it to a boil again. Afterwards, put in the chopped carrots, sliced tomatoes, green onions, celery, white pepper, cloves and nutmeg. Set aside 2 liter of the chicken broth. <br />Bone the chicken and slice in 1x2 cm shreds. Stir-fry the chicken until it's golden yellow and set aside. <br />Fry the spice paste until fragrant with 1 Tbs. vegetable oil. Add it to the stock and heat the stock to boiling. <br />Add the sliced spring onions, sweet soy sauce and vinegar. Stir well. <br />Adjust the seasoning and simmer for a few minutes. <br />To make the beansprout fritters, mix the flour, water and salt and then add the beansprouts. Drop a heaped tablespoonful of the mixture into hot oil and fry to a golden yellow color. Remove and set aside. <br />To serve: Arrange the beansprout fritters, fried potato chips, cellophane noodles, hard-boiled eggs in a deep soup plate. Sprinkle fried shalots and parsley on top. Cook for approximately 3 minutes, stirring occasionally. Drain immediately and rinse it under cold water. Mix the noodles with 1 Tbs. Of the oil, and set it aside. <br />Place the remaining 2 Tbs. of oil in a wok and cook over medium-high heat. Stir-fry the crush garlic and shallots until the color becomes yellow or brown, or the aroma comes out. Add the chicken/beef/pork and shrimp, stir-fry for approximately 2 minutes.
